I went to Wilton's "Make Perfect Cupcakes" and within a few minutes I could feel my confidence growing and my stomach growling. The well written site helped me every step of the way. Honestly, every step:

- Filling the specialty cupcake pan
- Adding mix-ins to the batter
- Filling the cupcake

I learned how to fill cupcake pans correctly. I've used spoons, measuring cups and ice creams scoopers in the past-- I usually make such a MESS--but, I've never heard of using decorating bags. I was very interested to learn about lowering the temperature by 25 degrees when using a dark pan, and also about using the crumb coat as a base for star-tipped icing.
